Fruit, Fruit and More Fruit!!


I stopped at a peach farm with my kids last week in North Carolina and bought a giant basket of lovely peaches. I made 20 jars of yummy peach jam! I also made Blackberry and Strawberry jam......55 jars total. We are set for jam till next summer!

Blackberry Jam Recipe yields 9 cups:

5 cups of crushed berries
7 cups of sugar
1 package of fruit pectin
(I added a 1/4 teaspoon of butter to reduce the foam)

Measure sugar and set aside.

Put the berries in a large cooking pot. Add 1 package of fruit pectin to the berries and bring to a rolling boil. Quickly add the sugar, stirring until mixture boils again. Boil for 1 minute and then quickly ladle jam into already washed hot jars.

Screw on the lids tightly. I don't have a canning pot so I boiled my jars in a pasta pot! Works great. Fill the pot with water, covering jars with at least an inch of water, and boil for 10 minutes. Jam should set up within a day. Enjoy.

  2. that is so cool! We wanted to make jam out of the fresh fruits we picked a few weeks ago. We ended up making a parfait, instead. One day, though..cuz I love homemade jam!
